White Currant Iced Tea

Making iced tea with currant berries is simple tasty and full of rich antioxidants and vitamin C.
Rinse, mash and strain currant berries.  You may need to add a little water to thin the berry mixture.  This strained juice concentrate can then be used much like lemon juice.

For Iced Tea:

  • 8 tea bags
  • 1/2 Gallon water
  • 1/2 c. currant berry juice
  • 4 tsp sugar or to taste

For Currant  Lemonade:

  • 1/2 c. currant juice
  • 1/4 c. sugar or to taste
  • 1/2 gallon water

May also be used in recipes (use as you would lemon juice) or mixed into fruit drinks.  Store extra concentrate  in cubes in the freezer. Portion sized or ice cubes work great.
