Grandma’s Bonitza

It seems like every time I went to Grandma’s house she was baking bonitza.  She would have me recite back her instructions and ingredients. If you like bread and butter and cottage cheese, you’ll like this! It can be eaten warm or cold.

The dough:

  • 1 tsp. salt
  • 1 pkg. yeast
  • 1 1/2 c. water
  • 3 c. flour

Mix dough (note the temperature of the water should be about hot shower, to make the yeast rise quicker).  Divide dough into 4 balls, cover  and let rise for 1 hour.

Filling:

  • 32 oz. container of cottage cheese
  • 2 eggs
  • 2 tbs. sugar
  • small amt melted butter (see below)

1/2 lb. butter, melted

Roll dough as thin as possible. Spread melted butter on dough then spread filling on dough. Roll dough with filling from 2 sides (like a scroll).  Repeat until all 4 balls are done. Put into 2 pie pans. Top with melted butter and any extra filling.

Bake @350 for 45 minutes until golden brown. Serve warm or cold.

I have heard that the filling can be made from other things like jam. I’ve never tried another filling as I love this. I’ve also heard it is a Bulgarian sweet snack. Have you ever had anything like this? I would love to hear from readers what they know about it.
