A simple and easy way to use rhubarb. Usually served over ice cream. Also good to snack on. High in fiber, Vitamin C and calcium. 1 cup of diced rhubarb is only 26 calories!
Using only the stalk pull off the stringy outer layer and cut into 1/4 inch pieces. Heat on low with a small amount of water added to prevent sticking/burning. Cook until soft and mushy. Add sugar last (about 1 tbsp to 1 quart) to taste. Cook until dissolved stirring constantly. Refrigerate leftovers.
Our sauce isn’t as red as most due to the type of rhubarb we have. Are you a rhubarb lover? I think it’s a bit of an acquired taste.
